How is Black Tea Processed?
The Black tea process involves many phases.
The leaves are picked from the
Camilla sinesis
brush. The leaves are then placed in a
drying area and left there to wither for several hours. The leaves are then broken,
bruised or crushed. This allows the enzymes to be exposed to the air (oxygen)
which results in oxidation. These aromatic oils aid in the
oxidation process, which last for several hours. The next part of the processing consists of
placing the leaves in an oven with temperatures reaching up
to 200 degrees Fahrenheit. The leaves are to dry to 80% dry,
which has now turned the leaves to a dark brown or black
color. This is to stop the oxidation process.
The last step in the process is the grading and sorting of
the tea.

Why Drink Green and Black Teas?
You can reduce your risk of heart disease by drinking
three or more cups of
black tea a day, a new study has found. Tea drinking
can also protect
against tooth plaque and can help strengthen bones.
Dr Carrie Buxton of King’s College London, and one of the
members of a
research team, said: “Drinking tea is actually better for
you than drinking
water. Water is essentially replacing fluid. Tea
replaces fluids and contains
antioxidants, so it’s got two things going for it.”
Black tea contains polyphenol antioxidants, which are also
found in foods and plants.
Its one downside is that it can reduce the absorption of
iron from food, so
people with anemia should avoid drinking tea around
mealtimes.

Simple
Steps to the Perfect Pot of Tea:
- Always
start with cold water. If you are make 4 cups of
tea then measure out 5 cups of water.
(as they say one cup for the teapot)
- Heat
the water to full boiling.
- Add
tea leaves to the teapot and pour prepared water to into
teapot. Steeping will vary from tea to tea depending on
the type. Please review the following.
Black
Tea:
- Bring
your water to a full boil and remove from heat.
- Add
tea, one level teaspoon per cup. For iced teas add a
semi-heaping teaspoon.
- Allow
tea to steep approximately 3 - 5 minutes, no more
than
5 minutes or the tea is very bitter.
Green
Teas:
- Bring
your water to a pre boil, when the little bubbles start
to form on the bottom of the pot, remove from heat.
- Add
tea, one level teaspoon per cup.
- Allow
tea to steep 1 ˝ - 2 minutes and remove leaves. Quality
green tea (the larger leaf, not cut) can be steeped more
than once. Save the leaves and re-steep, adding 1 minute
for each additional brew.
Oolongs
and Specialty Teas:
- Bring
your water to a pre boil. When the little bubbles are
coming to the surface (a bit hotter than you would need
for green tea) remove from heat.
- Add
tea, one level teaspoon per cup.
- Allow
tea to steep 4 - 6 minutes and remove leaves.
